Most likely it was invented by medieval monks from Franconia, Germany in the XIII century. The earliest records of baking lebkuhenov belong to no later 1296, and in 1395 they are mentioned in Nuremberg, where they bake the most famous lebkuheny.

This is very spicy gingerbread with honey citron, almonds, often decorated with sugar icing.


Predecessors lebkuhenov called "honey cakes, and their history can be traced to the ancient Egyptians, Greeks and Romans. They believed that honey is gift of the gods, and have magical and healing properties. The flat cakes were as talismans in battle and as a protection against evil spirits. Germanic peoples used honey cakes with the same goals, especially during the winter solstice, which may become a reason for such cookies associated with Christmas.

Nuremberg gingerbread

Since 1808 the highest-quality Nuremberg gingerbread became known Elisenlebkuchen.

It is not known whether the ratio of the name "Elissa" to the baker's daughter gingerbread or wife margrafa. Since 1996, the Nuremberg lebkuhen "protected by law, which means that it can produce only in Nuremberg.
